Temperatures soften, and although some mornings begin with a white frost, by midday the sun still warms and is welcomed\u2014an ideal alternation, they say, for the ripening of the grape. <\/p><p>The vineyards are cloaked in reddish and ochre tones, a burst of color where nature fully expresses itself. Eagles soar in the clear blue skies, while deer and rabbits frolic through the fields. <\/p><p>Strolling through this idyllic landscape, one can appreciate the variety of soils where the vines are planted, contributing to the diversity of the wines. Ribera del Duero, on elevated clay-limestone soils with sand and gravel. These soils are low in organic matter, which limits vine vigor and promotes aroma concentration, improving phenolic ripening and the wine\u2019s freshness.
